1 large courgette, grated | |
300g lamb mince | |
50g feta cheese | |
1 bunch of spring onions, finely chopped | |
1tbsp sugar free soy sauce | |
Mixture of fresh mint, coriander and parsley leaves, chopped finely | |
Freshly ground black pepper | |
2tsp butter |

Directions

Squeeze all the excess water from the grated courgette. Place all the ingredients except the butter in a mixing bowl. Mix well with your hand to combine, then form into eight burgers.

Melt the butter in a large chargrill pan set over a medium heat. Add the burgers and grill until cooked, turning halfway through. Serve with the vegetable side of choice.
