Gluten free if using Tamari instead of soy sauce. 

These burgers are so satisfying you really won’t miss the bun. They go very well with a Tabbouleh made with cauliflower rice, or with chips made out of turnips. With these carbohydrate ‘alternatives’ you won’t feel left out even at barbecues.

1 large courgette, grated
300g lamb mince
50g feta cheese
1 bunch of spring onions, finely chopped
1tbsp sugar free soy sauce
Mixture of fresh mint, coriander and parsley leaves, chopped finely
Freshly ground black pepper
2tsp butter

Directions

Squeeze all the excess water from the grated courgette. Place all the ingredients except the butter in a mixing bowl. Mix well with your hand to combine, then form into eight burgers.

Melt the butter in a large chargrill pan set over a medium heat. Add the burgers and grill until cooked, turning halfway through. Serve with the vegetable side of choice.
