Ingredients
80ml Water
400g Berries
10g Stevia
80g semolina
50ml Low Fat Milk
Directions
Bring the water to the boil in a medium saucepan. Add the berries and stevia and simmer for 15 minutes.
Strain this mixture through a sieve into a medium bowl, pushing the berries to release their juices.
Return the hot berry juice to the saucepan, add the semolina and stir well. Cook over a low heat for 10 minutes, stirring occasionally, until the mixture has a porridge-like consistency. Remove the pan from the heat and allow it to cool.
Use an electric beater to whisk the porridge so that it becomes light and mousse-like. Spoon the mixture into serving bowls and pour a little cold milk on top.
