Try this recipe for an ultra quick Feta and Spinach Quesadilla - a classic taste combination.
Use a sandwich maker to make this quick and tasty recipe. It will takes ten minutes max! A very quick and easy lunch.

Ingredients

2 wholemeal tortilla wraps

2 hard boiled eggs

200g low fat feta cheese

200g spinach leaves

Freshly ground black pepper

Spray oil
Directions
Cook the spinach in a steamer for 3 minutes. Squeeze out the excess water and finely chop the spinach.
Chop the hard boiled eggs and place in bowl. Crumble in the feta cheese then mix in the spinach once wilted and cooked.
Season the mixture with black pepper to taste.
- Spray the sandwich maker wells with spray oil and preheat.
- Divide the feta and spinach mixture equally between the tortilla wraps.
- Neatly roll up the individual tortilla wraps and cook them together in the sandwich maker for about 3 minutes.
- Once cooked, remove from the sandwich taster and cut each tortilla wrap in half.
- Serve without delay.
