Try these nutrition filled granola bars. These bars are no-bake and great to prepare ahead of time. To be eaten at breakfast, on the move or as a delicious filling snack throughout the day. Naturally vegan and gluten free.

Granola Protein Bars

Ingredients

  • 100g chopped brazil nuts

  • 100g chopped cashew nuts

  • 50g shelled pistachio nuts

  • 100g toasted coconut flakes

  • 100g dried cranberries

  • 100g wheat-free oat bran

  • 50g flaxseeds

  • 50g chia seeds

  • 100g coconut oil

  • 50ml maple syrup

Directions

  1. Line a 33cm x 23cm (13 inch x 9 inch) metal baking tin with parchment paper.
  2. Heat the coconut oil and maple syrup in a small pan over low heat. Stir until completely melted and combined. Set aside.
  3. Place the oat bran, cashew nuts, brazil nuts, and pistachio nuts in a non-stick pan. Toast gently over a low heat until golden in colour.
  4. Place the nut mixture in a bowl of an electric mixer.
  5. Pour in the rest of the ingredients, as well as the coconut and maple syrup liquid.
  6. Mix on a low setting with the paddle attachment for 30 seconds, or until just combined.
  7. Transfer to the baking tin and spread out evenly. Pressing the granola bar mixture gently and firmly into the base of the tray.
  8. Cut the mixture into 22 even-sized bars and place the tin in the fridge overnight.
