These lamb and feta burgers are so satisfying you really won’t miss the bun. They go very well with a Tabbouleh made with cauliflower rice, or with chips made out of turnips. 

With these carbohydrate ‘alternatives’ you won’t feel left out even at barbecues.


This recipe is gluten free if using Tamari instead of soy sauce.

Lamb & Feta Burgers

Ingredients

  • 380g Lamb mince

  • 60g Feta cheese

  • 1 large courgette

  • 10g butter

  • 1 Tbsp sugar free soy sauce or tamari (GF)

  • Spring onion finely chopped

  • Mixture of fresh mint, coriander and parsley leaves, chopped finely

  • Freshly ground black pepper

Directions

  1. Grate the courgette. Then, squeeze all the excess water from the grated courgette in your hands.

  2. Place all the ingredients, except the butter in a mixing bowl. Mix well with your hand to combine, then form into eight burgers.
  3. Melt the butter in a large grill pan set over a medium heat.
  4. Add the burgers and grill until cooked, turning halfway through.
  5. Serve with the vegetable side of choice.
