Skagen is an elegant Swedish speciality of prawns on bread that works well for breakfast and brunch or as a snack if you can afford the calories. This recipe is lower in calories than the original but without any sacrifice for taste.

Ingredients

400g Prawns
-
4tbsp Fresh Dill, Chopped

1tbsp Mayonnaise
-
1tbsp Sour Cream
-
1tbsp Dijon Mustard
-
Half Lemon
-
1tsp Horseradish Sauce (optional)

12 Rye Crispbreads
-
50g Herring Roe (or Caviar)
Directions
Mix all the ingredients except the crispbreads and caviar in a bowl.
Spread an equal amount on each crispbread and top with the herring roe. Serve cold.
