A nice and spicy low carb curry, very filling and delicious.
Ingredients

1 tbsp coconut oil

300g chicken fillets, sliced

1 ½ tbsp mild curry powder

1 large yellow pepper, sliced

1 courgette, chopped

80ml canned coconut milk

150g Dr. Eva’s Smart Rice
Directions
Heat a large non-stick pan or wok with coconut oil. Fry the chicken fillets with the curry powder until almost cooked.
Add the pepper and courgette, and pour in the coconut milk. Leave to simmer for 10 minutes.
Prepare the Smart Rice as per the instructions on the packet.
Serve the rice with the curry.
