A low carb Asian style salmon dish that you will make again and again.
Ingredients

3 stems of lemongrass, chopped finely

½ lime, sliced thinly

120g salmon fillet

Juice of ½ lime

1 tsp soy sauce

1 tsp sweet chilli sauce

1 aubergine, cut into chunky strips

1 large green pepper, cut into strips

2 tsp toasted sesame oil

½ small leek, chopped finely
-
Freshly chopped coriander (optional)
Directions
Preheat the oven to 180C.
Place the sliced lime on a large piece of tinfoil, and the lemongrass on top of it. Place the salmon on top of them.
Season the salmon with the lime juice, soy sauce and sweet chilli sauce. Close the tinfoil around it.
Place the aubergine and pepper on an oven tray. Rub in the oil.
Place the tinfoil parcel on the same tray and bake in the oven for 20 minutes.
Remove the lime slices and lemongrass pieces. Sprinkle the leek and coriander over the cooked salmon and serve hot.
