Lean beef mince, savory leeks, rich tomatoes, and fragrant fresh herbs come together in a warming filling, proving that healthy eating can be incredibly satisfying and wonderfully simple.





Cottage Pie with Cauliflower Mash

Ingredients

    • Spray oil

    • 450g beef mince

    • 1 medium size leek, cut into small pieces

    • 1 shallot, finely chopped

    • 4 celery sticks, roughly chopped

    • 2 garlic cloves, crushed

    • Stock made with 100ml of boiled water and ¼ beef stock cube

    • 400g can of chopped tomatoes

    • 200g button mushrooms, sliced

    • 5 large sprigs of thyme, chopped (or ½ tsp dried thyme)

    • 5 large sprigs of rosemary, chopped (or 1 tsp dried rosemary)

    • 5 large sprigs of oregano, chopped (or ½ tsp dried oregano)

    • Salt and pepper, to taste

    • 2 small cauliflowers, cut into florets

    • 2 Kallo French onion stock cubes

    • 100g cottage cheese (drained) or Philadelphia cheese

    Directions

    1. Place the cauliflower florets into a saucepan. Add the stock cubes and just enough water to cover. Bring to the boil and reduce to simmer until soft.

    2. Meanwhile, start browning the mince in a deep non-stick pan using the spray oil.

    3. Once the mince is almost cooked, add the leek, shallot, celery and garlic. Fry until almost cooked.

    4. Add the stock, tomatoes, mushrooms, herbs and cook through. Season with the salt and pepper.

    5. Drain the cooked cauliflower and blend with the cheese.

    6. Preheat the oven to 180C.

    7. Transfer the beef mix into an ovenproof dish and top up with the cauliflower mash.

    8. Bake in the oven for 20-30 minutes or until the mash is lightly browned.
